Ingredients
Method
- Peel the kohlrabi and cut it into thin slices or matchsticks.
- Cut the apple into sticks.
- Mix with the lemon juice and oil.
- Add the chives and leave to stand for 10 minutes.
Nutritional benefits
Kohlrabi is low in calories and rich in vitamin C and fibre, with a mild flavour somewhere between cabbage and radish. Raw, it keeps all its crunch and nutrients. The apple adds freshness and fibre. An original, light, detox-style salad that suits weight loss. Naturally vegan and gluten-free.
Variations and substitutions
- With grated carrot as well.
- With a yoghurt dressing (rémoulade style).
- With pumpkin or sunflower seeds.
- With black radish for more bite.
Storage and making ahead
Keeps for 2 days in the fridge; toss the apple in lemon juice so it does not turn brown.
💡 Good to know
Slice the kohlrabi finely (with a mandoline): raw and thin, it is tender and crunchy at the same time.
