Ingredients
Method
- Cook the potatoes and eggs, then leave to cool.
- Dice everything: potatoes, eggs, tomatoes, ham and gherkins.
- Mix the yoghurt and mayonnaise for a light dressing.
- Combine everything, season and chill.
Nutritional benefits
Replacing most of the mayonnaise with yoghurt makes the dressing half as heavy. The eggs and ham provide protein, the potatoes filling carbohydrate and the vegetables freshness. A complete, balanced dish.
Variations and swaps
- With tuna (instead of ham).
- Vegetarian (no ham, more eggs).
- With fresh herbs.
- 100% yoghurt dressing.
Storage and making ahead
Keeps for 2 days in the fridge; make it the day before so the flavours blend.
💡 Good to know
Season the potatoes with a splash of vinegar while they are still warm, before mixing: they absorb it better and the salad has more flavour.
