Variations and substitutions
- With beef, tofu or prawns.
- Spicier: chilli, sriracha.
- With sugar-free peanut butter.
- Served with a cucumber salad.
Storage and making ahead
The marinated chicken keeps for 2 days; the sauce for 3 days. Ideal for a lunchbox.
💡 Good to know
Loosen the peanut sauce with the coconut milk and lime until it coats the back of a spoon, neither too thick nor too runny.
