Homemade burger sauce
Nutrition per serving
Homemade burger sauce: creamy, slightly tangy and lifted with gherkins, like the sauce in fast-food restaurants, but made in 5 minutes. Half mayonnaise, half fromage blanc, it keeps all the flavour with far less fat.
Preparation: 5 min | Cooking: 0 min | Servings: 6 | Difficulty: Easy
Calculated per serving from the Anses Ciqual 2025 values for each ingredient, based on the quantities in the list. Household measures (spoonfuls, pieces) use average weights. 69 kcal · 1 g protein · 2 g carbohydrate · 6 g fat
Ingredients
- 45 g mayonnaise
- 45 g fromage blanc (fresh soft cheese)
- 30 g ketchup
- 10 g mustard
- 20 g gherkins
- 15 g shallot
- 2 g paprika
Method
- Finely chop the gherkins and shallot.
- Mix the mayonnaise and fromage blanc until smooth and creamy.
- Add the ketchup, mustard and paprika.
- Stir in the gherkins and shallot, then leave to rest in the fridge for 30 minutes.
Nutritional highlights
Replacing half of the mayonnaise with fromage blanc almost halves the fat: this sauce has about 69 kcal per serving, against about 115 kcal with 90 g of mayonnaise alone. The fromage blanc also adds a little protein. It is still a sauce, so use it in a thin layer in the burger.
Variations and substitutions
- With Greek yoghurt instead of fromage blanc.
- Spiced up with a dash of hot sauce.
- With smoked paprika.
- With red onion instead of shallot.
Storage and making ahead
Keeps for 3 days in the fridge in a closed container.
💡 Good to know
Leave it to rest for at least 30 minutes in the fridge before serving: the gherkins and shallot flavour the whole sauce.
