Tips
The mascarpone carries the fat. The tiramisu has 6.41 g of saturated fatty acids per 100 g: mascarpone alone has almost four times as much. It is the mascarpone, not the biscuits, that makes the dessert so dense.
One portion weighs 100 g: count on 242 kcal. This is a dessert for a meal, not an afternoon snack. The family-size format invites much more generous portions.
Homemade, replace half the mascarpone. With ricotta or beaten fromage blanc: the texture stays creamy and the fat is halved. See our tiramisu recipe.
Raw eggs: a real caveat. The traditional recipe uses uncooked yolks. Industrial versions use pasteurised egg products; a homemade tiramisu is not recommended for pregnant women, young children or people with weakened immune systems.
The coffee does not make up for anything. The caffeine in a portion is modest: it is neither a stimulant nor a “fat burner”. It is a dessert.
