A lighter tiramisu: we keep the coffee, cocoa and sponge fingers, but replace part of the mascarpone with fromage blanc and ricotta. Just as creamy, much lighter.

Ingredients

Method

  1. Separate the whites from the yolks. Whisk the yolks with the sugar.
  2. Add the mascarpone and fromage blanc and mix.
  3. Whisk the whites to stiff peaks and fold them in gently.
  4. Dip the sponge fingers in the coffee, alternate layers of sponge fingers and cream, and finish with cocoa. Chill for 4 hours.

Nutritional benefits

By replacing half of the mascarpone with fromage blanc, you almost halve the fat while keeping the smoothness and gaining protein. The sugar is reduced. An indulgent classic made more reasonable.

Variations and substitutions

  • With red berries (no coffee).
  • With speculoos biscuits.
  • Without raw egg (cooked custard).
  • With decaffeinated coffee.

Storage and making ahead

Keeps for 2 days in the fridge (raw eggs); best after resting overnight.

💡 Good to know

Fold in the whisked egg whites in two goes, lifting the mixture: this keeps the tiramisu airy despite the lighter ingredients.

Pregnant? This recipe contains raw eggs, which are not recommended during pregnancy. Our adapted egg-free version is in the tiramisu in pregnancy guide.
