Ingredients

Method

  1. Preheat the oven to 180°C (160°C fan). Wash and stone the cherries, then arrange them in a dish.
  2. Whisk the eggs with the sugar, add the flour, then the milk and vanilla to make a runny batter.
  3. Pour the batter over the cherries.
  4. Bake for 30 to 35 minutes, until the clafoutis is set and golden. Serve warm or cold.

Nutritional benefits

This lighter clafoutis cuts the sugar (thanks to coconut sugar and the natural sweetness of the cherries) and leaves out the butter, making it a much lighter dessert than the traditional version. The wholemeal flour adds fibre, the eggs and milk provide protein and calcium, and the cherries bring antioxidants (anthocyanins) and vitamin C. It is a fruity, comforting family dessert with a reasonable calorie count, perfect for enjoying seasonal fruit.

Variations and substitutions

  • With other fruit: apricots, plums, mirabelles, berries.
  • Dairy-free: use a plant-based drink.
  • Gluten-free: rice flour or ground almonds.
  • Higher in protein: replace some of the flour with ground almonds.

Storage and making ahead

The clafoutis keeps for 3 days in the fridge and is eaten warm or cold. It is even better the next day, well chilled. Avoid freezing it, as the texture of the custard suffers.

💡 Good to know

Traditionally the cherry stones are left in (they add an almond flavour), but for children it is safer to stone them. A touch of vanilla or bitter almond makes the clafoutis even better.
