Butter-free chocolate almond cookies
Nutrition per serving
Soft cookies with a melting centre, made without butter or refined sugar: almond butter replaces the fat and brings a good nutty flavour. With dark chocolate chips, they satisfy sweet cravings while staying reasonable. Ready in 20 minutes, they are perfect for teatime.

Ingredients
- 100 g almond butter
- 1 egg
- 3 tbsp maple syrup
- 100 g wholemeal flour
- 50 g dark chocolate
- 1/2 tsp baking powder
Method
- Preheat the oven to 180 °C. Mix the almond butter, egg and maple syrup.
- Add the flour and baking powder, then the chopped dark chocolate pieces.
- Shape small flattened mounds on a baking tray lined with baking paper.
- Bake for 10 to 12 minutes: the cookies should stay soft in the middle. Leave to cool.
Nutritional benefits
By replacing butter with almond butter, these cookies swap some of the saturated fat for healthy unsaturated fats, magnesium and a little plant protein. Refined sugar gives way to a small amount of maple syrup, and the wholemeal flour provides fibre. Dark chocolate, richer in cocoa, adds antioxidants. The result: an indulgent cookie that is more balanced than a classic version, to enjoy with pleasure and without overdoing it.
Variations and substitutions
- Gluten-free: replace the flour with ground almonds plus a little starch.
- Vegan: replace the egg with 1 tbsp ground flaxseed mixed with water.
- Other nut butters: peanut or hazelnut instead of almond.
- Higher in protein: add a scoop of protein powder.
Storage and making ahead
These cookies keep for 4 to 5 days in an airtight tin and can be frozen (baked, or as shaped raw dough ready to bake). Ideal for always having a homemade teatime treat to hand.
💡 Good to know
Take the cookies out of the oven while they still look a little soft: they firm up as they cool and so keep a tender centre instead of turning dry.
