Baked eggs with spinach
Nutrition per serving
A comforting classic, high in protein and very low in carbohydrate: baked eggs with spinach (œufs cocotte) are perfect for a keto breakfast or a light dinner. Wonderfully creamy, they come together in minutes and give you a lovely runny yolk for dipping. A simple recipe that looks impressive.

Ingredients
Method
- Preheat the oven to 180 °C. Wilt the spinach in a frying pan for 2 minutes.
- Divide the spinach between two ramekins and add 2 tbsp of crème fraîche to each.
- Crack 2 eggs into each ramekin, season with salt and pepper and add a pinch of nutmeg.
- Bake for 12 to 15 minutes: the white should be set and the yolk still runny.
Nutritional benefits
This is a typical keto meal: very rich in fat and protein, with almost no carbohydrate (under 5 g), it helps you stay in ketosis while keeping you full for a long time. Eggs are a benchmark for complete protein and provide choline, vitamin B12 and vitamin D. Spinach adds iron, magnesium and folate for very few calories. The cream supplies the fat that gives this dish its signature richness; you can lighten it without spoiling the recipe.
Variations and substitutions
- Lactose-free: replace the cream with coconut or soya cream.
- Higher in protein: add diced ham, smoked salmon or grated cheese.
- More vegetables: fried mushrooms or cherry tomatoes.
- Brunch version: serve with toast soldiers (not for low carb).
Storage and making ahead
Baked eggs are best eaten straight from the oven. You can prepare the ramekins (spinach and cream) ahead and only add the eggs just before baking.
💡 Good to know
Watch the cooking closely towards the end: a few minutes too long and the yolk sets. Take the ramekins out when the white has only just set, as the residual heat finishes the job.
