Tips
384 kcal: this is the densest goat’s cheese in the database. Maturing evaporates the water (only 44.8 g per 100 g remains) and concentrates everything else. A dry crottin weighs 50 g, or 192 kcal.
1.01 g of salt, on the other hand, is remarkably low. Less than a PDO Crottin de Chavignol at 1.58 g. A 30 g portion provides 0.3 g of salt.
Fresh or dry, two different products. A fresh crottin contains far more water, so fewer calories per gram. The dry one is more useful in cooking, the fresh one as a dessert with honey.
Warm on a salad, with no added oil. At 32.6 g of fat, it releases plenty to coat the leaves. A vinaigrette made with lemon is enough.
Raw milk. This version is not recommended for pregnant women or people with weakened immune systems; the pasteurised crottins sold in shops carry no restriction.
