Ingredients
- 2 sweet potatoes
- 4 tbsp chickpea flour
- 1 onion
- 1 tsp cumin
- 1 tbsp olive oil
- salt, pepper
Method
- Grate the sweet potatoes and mix with the flour, onion and cumin.
- Shape into patties and place them on an oiled baking tray.
- Bake for 25 minutes at 200 °C, turning halfway through.
- Serve with a yoghurt sauce.
Nutritional benefits
Sweet potato provides complex carbohydrate with a moderate glycaemic index, fibre and beta-carotene. Chickpea flour binds the patties without egg (making them vegan) and adds plant protein. Baked rather than fried, these patties stay light and are naturally gluten-free.
Variations and substitutions
- With spices: curry powder, smoked paprika.
- With carrot or parsnip.
- With fresh herbs.
- Pan-fried for extra crispness.
Storage and making ahead
Keep for 3 days and can be frozen. Reheat in the oven to bring back their softness.
💡 Good to know
Squeeze the grated sweet potato if it releases water, and press the patties down firmly: they hold together better as they cook.
