Ingredients
- 400 g of very fresh beef (fillet)
- 1 lemon
- 50 g of Parmesan
- 100 g of rocket
- 3 tbsp olive oil
- pepper, fleur de sel
Method
- Put the beef in the freezer for 30 minutes, then slice it very thinly.
- Arrange the slices in a circle.
- Drizzle with lemon juice and olive oil.
- Scatter over the rocket, Parmesan shavings and pepper.
Nutritional benefits
Lean raw beef is rich in protein, iron and zinc, with very little carbohydrate, which makes it ideal for a low-carb diet. Rocket adds fibre and vitamins, and Parmesan adds calcium. A fine, light Italian starter, as long as you use top-quality, extra-fresh beef that has been firmed up in the cold first.
Variations and substitutions
- With thinly sliced raw mushrooms.
- With pesto or sun-dried tomatoes.
- With toasted pine nuts.
- With bresaola (cured) for a version without raw meat.
Storage and making ahead
Eat straight away; prepare it at the last minute.
💡 Good to know
Firm up the beef in the freezer for 30 minutes before slicing: it cuts into very thin slices that would be impossible to get otherwise.
