Nutritional benefits
Congee is a gentle, very digestible dish: long-cooked rice becomes an easily absorbed porridge, the chicken provides lean protein, and the ginger warms you and supports digestion. Comforting and nourishing, it is the Asian dish of choice when you are feeling under the weather.
Variations and substitutions
- Vegetarian: use vegetable stock and tofu.
- Add shiitake mushrooms.
- Add eggs (stir in a beaten egg at the end of cooking).
- Spice it up with chilli and sesame oil.
Storage and preparing ahead
Keeps for 3 days; it thickens a lot as it cools. Loosen with stock when reheating.
💡 Good to know
Stir regularly and cook for a long time: that releases the rice starch and gives congee its creamy texture.
