Ingredients
Method
- Braise the chicory in a frying pan (with a little water, covered).
- Roll each chicory head in a slice of ham.
- Make a light béchamel (milk and cornflour) and pour it over.
- Sprinkle with cheese and bake for 20 minutes at 200 °C (180 °C fan) until golden.
Nutritional benefits
Chicory is low in calories and rich in fibre and water, ideal for weight loss. The ham provides lean protein, and the cornflour béchamel (no butter) keeps the dish light and gluten-free. A comforting but balanced gratin, perfect in winter.
Variations and substitutions
- With turkey or chicken ham.
- Vegetarian: leave out the ham and use hard-boiled eggs.
- Lactose-free: use plant-based milk and malted yeast.
- A little mustard in the béchamel.
Storage and making ahead
Keeps for 3 days and reheats in the oven. Can be prepared ahead.
💡 Good to know
Drain the braised chicory well before rolling it: it releases water that would make the gratin soggy.
