- 150 g of rice
- 1 onion

Variations and substitutions
- With brown rice for more fibre.
- With a poached or soft-boiled egg on top.
- With shiitake mushrooms.
- Spicier: add togarashi chilli.
Storage and making ahead
Best fresh; keeps for 2 days (beef and rice stored separately). Reheat in a frying pan.
💡 Good to know
Ask the butcher for very thin slices of beef (or put the meat in the freezer for 30 minutes before slicing): they cook in minutes and stay tender.
