Nutritional benefits
Lean raw beef is very rich in protein, haem iron and zinc, with little carbohydrate, which suits a low-carb diet. Cut by hand and seasoned with capers and herbs, tartare is a fresh, high-protein dish. Use top-quality, extra-fresh beef and eat it straight away.
Variations and substitutions
- Italian style (Parmesan, rocket, lemon).
- Spicier or milder, to taste.
- With gherkins as well as capers.
- Served with a green salad (skip the chips for the light version).
Storage and making ahead
Eat straight away; tartare is made at the last minute for freshness and food safety.
💡 Good to know
Cut the meat by hand (rather than mincing it) from an extra-fresh piece: the texture and the food safety are much better.
