Ingredients

Method

  1. Roll out the pastry and spread it with mustard.
  2. Scatter over the flaked tuna and sliced tomatoes.
  3. Beat the eggs with the milk and herbs and pour over the filling.
  4. Bake for 35 minutes at 180 °C.

Nutritional benefits

Tuna in water is an excellent source of lean protein and omega-3, with very little fat. With tomatoes and a milk-based custard (rather than cream), this tart is light and balanced. Perfect to take away.

Variations and substitutions

  • With salmon.
  • With vegetables (courgettes, peppers).
  • Without pastry (savoury clafoutis).
  • Wholemeal pastry.

Storage and making ahead

Keeps for 3 days in the fridge; eat hot or cold, ideal in a lunch box.

💡 Good to know

Drain the tuna well and deseed the tomatoes: less water in the filling, and the custard sets perfectly without making the pastry soggy.
