Ingredients
- 4 chicken breasts
- 3 carrots
- 200 g mushrooms
- 1 onion
- 150 g plain yoghurt
- 1 tbsp cornflour
Method
- Brown the chicken pieces and set aside.
- Cook the carrots, mushrooms and onion in a little stock.
- Return the chicken and leave to simmer for 20 minutes.
- Off the heat, thicken with the yoghurt and the cornflour mixed with a little water.
Nutritional benefits
Chicken provides lean protein, and the vegetables fibre and vitamins. By replacing the cream with yoghurt and thickening with cornflour, this blanquette keeps its creaminess while cutting the fat. A comforting slow-cooked dish that is still balanced.
Variations and substitutions
- With turkey or fish.
- With leeks and turnips.
- Lactose-free: use plant-based cream.
- With rice or steamed potatoes.
Storage and preparing ahead
Keeps for 3 days and reheats gently (without boiling, so the sauce does not split).
💡 Good to know
Add the yoghurt off the heat and do not boil again: the sauce stays smooth and does not split.
