Ingredients

Method

  1. Cook the potatoes and poach the cod.
  2. Mash the potatoes with the milk and garlic.
  3. Fold in the flaked cod and olive oil.
  4. Spoon into a dish and bake for 15 minutes at 200 °C until golden.

Nutritional benefits

Cod provides very digestible lean protein, and potatoes bring carbohydrate and potassium. By making the mash with milk rather than cream and excess oil, this brandade is much lighter while staying creamy. It is a comforting, balanced dish.

Variations and substitutions

  • With desalted salt cod (the traditional version).
  • With herbs: thyme, bay leaf.
  • With a green salad for balance.
  • Dairy-free: plant-based milk.

Storage and making ahead

Keeps for 3 days and reheats in the oven. Can be frozen.

💡 Good to know

Poach the cod in flavoured milk (garlic, bay leaf): it stays tender and scents the brandade.
