Nutritional benefits

Fish provides lean protein and omega-3, which is good for cholesterol, and eggs add complete protein. Bound with soft cheese rather than cream, this terrine stays light and delicate. Low in carbohydrate, it is a refined, healthy starter that is naturally gluten-free.

Variations and substitutions

  • With prawns or scallops.
  • With spinach for colour.
  • Served with a yoghurt and lemon sauce.
  • With Greek yoghurt instead of soft cheese.

Storage and making ahead

Keeps for 3 days in the fridge and is eaten cold, so it can be made ahead.

💡 Good to know

Cooking in a bain-marie is essential: it cooks the terrine gently without drying it out.
