- 100 g cabbage
- 1 piece of ginger

Nutritional benefits
Lean pork provides protein, root vegetables provide fibre and vitamins, and fermented miso brings umami and probiotics. Heartier than a classic miso soup, tonjiru is a complete, comforting soup that works as a meal, ideal in winter. Naturally gluten-free and dairy-free.
Variations and substitutions
- With tofu for a vegetarian version.
- With mushrooms and konjac.
- With sweet potato.
- Spicier: chilli, sesame oil.
Storage and making ahead
Keeps for 2 days; reheat without boiling (because of the miso) and add a little more miso when reheating if needed.
💡 Good to know
Add the miso without letting it boil: excessive heat destroys its probiotics and spoils its flavour.
