Nutritional benefits

Veal is a lean meat, rich in protein. Braised in a tomato sauce packed with vegetables rather than in cream, the paupiettes make a balanced dish. Serve with rice or wholewheat pasta for a complete meal.

Variations and swaps

  • With mushrooms.
  • In a lighter mushroom sauce.
  • With olives.
  • Made with turkey (cheaper).

Storage and making ahead

Improve on standing: even better the next day. Keep for 3 days and freeze well.

💡 Good to know

Brown the paupiettes well before braising: this colouring develops flavour and gives the sauce body.
