Nutritional benefits
This savoury cake is a balanced option for a lunch on the move: eggs and feta provide filling protein and calcium, the vegetables fibre and vitamins, and the semi-wholemeal flour complex carbohydrate that is more useful than white flour. By increasing the share of vegetables and limiting the fat, you get a tasty cake that is much lighter than traditional butter-rich versions.
Variations and substitutions
- With seasonal vegetables: spinach, broccoli, sun-dried tomatoes.
- More protein: add tuna, chicken or diced ham.
- Dairy-free: replace the feta with olives and nutritional yeast.
- With herbs: basil, chives, mint.
Storage and make-ahead
This cake keeps for 3 days in the fridge and freezes sliced. It is eaten warm or cold, perfect for a lunchbox or drinks. Reheat a slice for a few minutes in the oven.
💡 Good to know
Fry the vegetables well before adding them to drive off their water, otherwise the cake will be too wet. Cut them into small, even cubes so they are spread evenly.
