Ingredients
Method
- Cut the broccoli into florets.
- Coat them with the oil, garlic, salt and pepper.
- Roast for 25 minutes at 200°C until browned.
- Squeeze over the lemon at the end of cooking.
Nutritional benefits
Broccoli is rich in vitamin C, fibre and antioxidants for few calories, which makes it ideal for weight loss and low-carb eating. Roasted rather than boiled, it keeps its nutrients and develops a golden, crisp flavour that is far more appetising. Garlic and lemon add flavour without calories.
Variations and substitutions
- With Parmesan (not vegan).
- With flaked almonds.
- With chilli and sesame seeds.
- With cauliflower as well.
Storage and making ahead
Best fresh and crisp; keeps for 2 days. Reheat in the oven.
💡 Good to know
Do not overcrowd the tray, and roast it well: the broccoli should brown and crisp up, not steam in a heap.
