- 40 g of Parmesan
- 3 tbsp olive oil
- 2 cloves of garlic
Method

Nutritional benefits
The vegetables bring fibre, vitamins and antioxidants, the rolled oats add fibre and a crunchy texture without butter (replaced by olive oil), and the Parmesan gives flavour and calcium. An original, comforting savoury crumble, lighter than a pie or a rich gratin, which makes vegetables really appealing.
Variations and substitutions
- With aubergines, peppers or butternut squash.
- Vegan: nutritional yeast instead of Parmesan.
- With hazelnuts in the crumble.
- Gluten-free: use gluten-free oats and flour.
Storage and making ahead
Keeps for 3 days and can be reheated in the oven to restore the crunch.
💡 Good to know
Replace the butter in the crumble with olive oil and add rolled oats: you keep the crunch while making it much lighter.
