Ingredients

Method

  1. Heat the milk with the vanilla.
  2. Whisk the eggs, sugar and cornflour, then pour in the hot milk, stirring.
  3. Return to the heat and thicken, stirring constantly.
  4. Pour into the pastry-lined tin and bake for 45 minutes at 180 °C.

Nutritional benefits

A homemade flan lets you cut the sugar considerably compared with bakery versions, while keeping the calcium and protein from the milk and eggs. One slice is enough, as the filling is dense and filling.

Variations and substitutions

  • Pastry-free (light flan parisien).
  • Made with semi-skimmed milk.
  • Flavoured with tonka bean or orange blossom water.
  • With prunes (far breton style).

Storage and making ahead

Keeps for 3 days in the fridge; it holds together even better when thoroughly chilled.

💡 Good to know

Let it cool completely in the fridge (ideally overnight) before cutting: the slices will be clean and the custard well set.
