Ingredients

Method

  1. Grate the courgette and carrot and squeeze out the water.
  2. Mix with the rolled oats, eggs and cheese.
  3. Leave to rest for 10 minutes, then shape into patties.
  4. Brown them for 5 minutes on each side.

Nutritional benefits

Rolled oats provide fibre, complex carbohydrate and plant protein, the eggs and cheese complete protein, and the vegetables vitamins. These savoury patties are filling and balanced, and let you enjoy oats at times other than breakfast.

Variations and substitutions

  • With spinach or broccoli.
  • Lactose-free: use nutritional yeast instead of cheese.
  • Baked in the oven for less fat.
  • With spices: cumin, curry powder, paprika.

Storage and preparing ahead

Keep for 3 days and can be frozen. Reheat in a frying pan or the oven.

💡 Good to know

Let the mixture rest for 10 minutes: the oats absorb the moisture and the patties hold together much better.
