Ingredients

Method

  1. Cut the tomatoes into slices or wedges.
  2. Slice the red onion thinly.
  3. Arrange the tomatoes and scatter over the basil and onion.
  4. Drizzle with olive oil and balsamic vinegar and sprinkle with fleur de sel.

Nutritional benefits

Tomatoes are rich in lycopene, an antioxidant, and in vitamin C, for very few calories. Full of flavour, heritage tomatoes need nothing more than a drizzle of olive oil and some basil to shine. A light, hydrating, summery salad, naturally vegan and gluten-free.

Variations and substitutions

  • With mozzarella or burrata (not vegan).
  • With feta and olives.
  • With pesto instead of basil.
  • With strawberries for a touch of sweetness.

Storing and preparing ahead

Best fresh; prepare and eat straight away. Dress at the last moment.

💡 Good to know

Take the tomatoes out of the fridge an hour before serving: at room temperature they are far more fragrant.
