Teriyaki sauce
Teriyaki sauce combines soy sauce, mirin, sake and sugar, reduced until they form a shiny glaze. Teri means « lustre » and yaki « grilled »: the name describes a Japanese cooking technique, not just a sauce.

Tips
Twice as sweet as a fizzy drink, weight for weight. 14.1 g of sugars per 100 g. On two tablespoons, that comes to about 8 g of sugar, the equivalent of two sugar lumps. This is the point that « light Asian sauce » marketing labels generally leave out.
It glazes, it does not season. Its sugar caramelises with heat: brush it on at the end of cooking over chicken or fish that is already cooked. Added too early, it burns and turns bitter.
The homemade version is better and much less sweet. Tamari, a little honey, ginger and garlic, reduced for five minutes: you can cut the sugar down without losing any of the glaze.
A teriyaki dish is a salty-sweet dish. Count it as such over the day, and serve it with unsweetened vegetables such as pak choi, broccoli or courgette, rather than a side that is itself sweet.
Gluten. Made with regular soy sauce, it almost always contains it. Tamari-based versions exist but remain rare.
