Ingredients

Method

  1. Preheat the oven to 200 °C. In a dish, arrange the cherry tomatoes around the block of feta, drizzle with olive oil and add the garlic and herbs.
  2. Bake for 25 to 30 minutes, until the feta is golden and the tomatoes are soft.
  3. Meanwhile, cook the pasta al dente.
  4. Crush the feta and tomatoes with a fork to make a sauce, then mix with the pasta and a little cooking water.

Nutritional benefits

This version uses wholewheat pasta, which is higher in fibre and has a lower glycaemic index than white pasta. The feta provides protein and calcium while doing the job of the sauce on its own (no cream needed), and the roasted tomatoes concentrate flavour and antioxidant lycopene. Olive oil adds healthy fats. A comforting, tasty dish, more balanced than a creamy ready-made sauce.

Variations and substitutions

  • More vegetables: add courgette, pepper or spinach to the oven dish.
  • More protein: roasted chickpeas or chicken.
  • Gluten-free: legume or corn pasta.
  • Spicier: a hint of chilli or sun-dried tomatoes.

Storage and make-ahead

This dish keeps for 2 to 3 days in the fridge and can be eaten hot, or cold as a pasta salad. Reheat with a drizzle of water or oil to revive the sauce.

💡 Good to know

Always keep a little of the pasta cooking water: mixed with the roasted feta, it creates a creamy, clinging sauce without any added fat. Really ripe tomatoes make all the difference.
