Ingredients

Method

  1. Cut the chicken and peppers into strips. Slice the onion.
  2. Marinate the chicken for 10 minutes with the spices, garlic and lime juice.
  3. Sear the chicken over a high heat and set aside, then stir-fry the peppers and onion.
  4. Combine everything and serve with warm tortillas, to fill at the table.

Nutritional benefits

Fajitas are a balanced dish when you keep an eye on portions: the chicken provides lean protein (30 g per serving), perfect for gaining muscle, the peppers and onion add fibre, vitamin C and antioxidants, and the tortilla supplies carbohydrate for energy. Stir-frying with little oil and homemade spices avoids the fatty sauces of restaurant versions. A festive meal that stays healthy.

Variations and substitutions

  • With beef, prawns or marinated tofu.
  • Wholemeal or corn tortillas (gluten-free).
  • Toppings: avocado, salad, plain yoghurt, tomato salsa.
  • More vegetables: add sweetcorn or black beans.

Storage and make-ahead

The filling (chicken and peppers) keeps for 3 days in the fridge and is reheated in a frying pan, perfect for meal prep. Warm the tortillas separately at the last moment.

💡 Good to know

Marinate the chicken ahead (up to several hours) for fajitas that are extra flavourful and tender. Sear it over a high heat in a single layer so that it browns instead of stewing.
