Nutritional benefits

This protein bread is an excellent breakfast base for athletes and anyone building muscle: the skyr and protein powder make it a dense source of protein (11 g per slice) for fullness and muscle, while the oats provide fibre and complex carbohydrate for lasting energy. With no white flour or sugar, it is far more nourishing and filling than shop-bought sliced bread, and it gets your day off to a good start on the protein front.

Variations and substitutions

  • Sweet: add cinnamon, dried fruit or chocolate chips.
  • Savoury: seeds and herbs, topped with egg or avocado.
  • Without protein powder: replace it with more oats.
  • Dairy-free: plant-based skyr or fromage frais alternative.

Storage and making ahead

This bread keeps for 4 to 5 days wrapped in the fridge and freezes well sliced: take out a slice as needed and pop it in the toaster. Perfect for high-protein breakfasts all week.

💡 Good to know

Sliced and toasted, this dense bread holds up perfectly for loaded toast (avocado, egg, fromage frais). A slice at breakfast with a piece of fruit makes a complete, high-protein meal.
