Variations and substitutions
- Pastry-free (light flan parisien).
- Made with semi-skimmed milk.
- Flavoured with tonka bean or orange blossom water.
- With prunes (far breton style).
Storage and making ahead
Keeps for 3 days in the fridge; it holds together even better when thoroughly chilled.
💡 Good to know
Let it cool completely in the fridge (ideally overnight) before cutting: the slices will be clean and the custard well set.
