Nutritional benefits

Large white beans are an excellent source of plant protein, fibre and iron, and are very filling. Baked in a tomato sauce with olive oil, they make a complete and tasty Greek dish. Naturally vegan and gluten-free, they are delicious hot or cold as part of a meze.

Variations and substitutions

  • Add crumbled feta (not vegan).
  • Add smoked paprika.
  • Add spinach as well.
  • Spicier: add chilli.

Storing and preparing ahead

Keep for 4 days and improve with time; can be eaten cold. Excellent for batch cooking.

💡 Good to know

Baked uncovered, the beans caramelise slightly on top: that is what makes it “plaki”.
