Nutritional benefits
Tomatoes are rich in lycopene, an antioxidant, and in vitamin C, for very few calories. Full of flavour, heritage tomatoes need nothing more than a drizzle of olive oil and some basil to shine. A light, hydrating, summery salad, naturally vegan and gluten-free.
Variations and substitutions
- With mozzarella or burrata (not vegan).
- With feta and olives.
- With pesto instead of basil.
- With strawberries for a touch of sweetness.
Storing and preparing ahead
Best fresh; prepare and eat straight away. Dress at the last moment.
💡 Good to know
Take the tomatoes out of the fridge an hour before serving: at room temperature they are far more fragrant.
