Ingredients

Method

  1. Mash the drained kidney beans with a fork.
  2. Add the finely chopped onion and garlic, the oats, the egg, the cumin, salt and pepper.
  3. Shape the mixture into patties.
  4. Brown them for 5 to 6 minutes on each side in a frying pan with a little oil.

Nutritional benefits

These veggie burgers are an excellent source of plant protein and fibre thanks to the kidney beans, with strong filling power and a low glycaemic index. The oats add extra fibre and bind the mixture. Made at home, they avoid the additives and excess salt of ready-made patties. Served with a grain (bread, rice), they offer a complete protein profile.

Variations and substitutions

  • Vegan: replace the egg with ground flaxseed and water.
  • Use chickpeas or lentils instead of the beans.
  • Spiced: smoked paprika, coriander, chilli.
  • As a burger: in a wholemeal bun with raw vegetables and sauce.

Storage and make-ahead

These burgers keep for 3 days in the fridge and can be frozen (raw or cooked), which is handy for quick meals. Reheat them in a frying pan or the oven. The raw mixture can also be shaped ahead of time.

💡 Good to know

If the mixture is too wet, add more oats; if it is too dry, a little water or oil. Let the patties rest for 10 minutes before cooking so they hold together better.
