Ingredients
- 200 g of semi-wholemeal flour
- 5 apples
- 4 tbsp neutral oil
- 5 cl of water
- 2 tbsp soft brown sugar
- 1 tsp cinnamon
Method
- Make a dough with the flour, oil, water and a pinch of salt. Roll it out into a tin.
- Peel the apples and cut them into thin slices.
- Arrange them in a rosette on the pastry, sprinkle with coconut sugar and cinnamon.
- Bake for 30 to 35 minutes at 180 °C, until the pastry is golden.
Nutritional benefits
This tart lightens the classic version in several ways: an oil-based pastry (instead of butter) made with semi-wholemeal flour for more fibre, and very little added sugar, the sweetness coming mostly from the apples. Apples provide fibre (pectin) and antioxidants. It is a comforting family dessert, more balanced than a custard tart rich in butter and sugar, ideal for an afternoon snack.
Variations and substitutions
- With pears, apricots or apples and red berries.
- Gluten-free: pastry made with a gluten-free flour blend.
- A layer of compote underneath for extra moistness.
- A hint of vanilla or lemon zest.
Storage and make-ahead
This tart keeps for 3 days and can be eaten warm or cold. It freezes in slices. Warm it for a few minutes in the oven to bring back the crispness of the pastry.
💡 Good to know
Pack the apple slices in tightly: they shrink as they cook. A thin layer of compote under the apples keeps the tart moist and stops the pastry going soggy.
