Ingredients

Method

  1. Boil the potatoes and cut them into slices.
  2. Soften the onions and the lardons (drained of fat).
  3. Layer the potatoes, onions and lardons in a dish and moisten with the milk.
  4. Cover with the reblochon and bake for 25 minutes at 200 °C.

Nutritional benefits

By reducing the amount of reblochon and lardons (drained of their fat) and loading up on potatoes and onions, you get a more sensible tartiflette. Served with a large green salad, it remains a balanced winter dish.

Variations and substitutions

  • With chicken lardons (leaner).
  • With some sweet potato.
  • Vegetarian (no lardons, more mushrooms).
  • With goat’s cheese.

Storage and making ahead

Keeps for 2 days and reheats in the oven; best freshly browned on top.

💡 Good to know

Always serve a green salad on the side: it balances the dish and cuts through the richness of the cheese.
