Ingredients
- 500 g of chicken
- 2 tins of sweetcorn (hominy)
- 2 tomatoes
- 1 onion
- 2 cloves of garlic
- 1 tsp cumin
- 1 lime
Method
- Poach the chicken in a stock with the onion, garlic and cumin.
- Shred the chicken and return it to the pot.
- Add the sweetcorn and the tomatoes and simmer for 20 minutes.
- Serve with radishes, avocado, coriander and lime.
Nutritional benefits
Chicken provides lean protein, the sweetcorn adds carbohydrate and fibre, and the fresh toppings (radishes, avocado) bring vitamins and healthy fats. Pozole is a complete, sociable soup meal, healthier than many rich Mexican dishes. Naturally gluten-free and dairy-free.
Variations and substitutions
- With lean pork (traditional pozole).
- Vegetarian: with beans instead of chicken.
- Red pozole (with chillies) or green (with tomatillos).
- Spicier: add chilli.
Storage and making ahead
The broth keeps for 3 days and can be frozen; add the fresh toppings just before serving.
💡 Good to know
Pozole is served with an array of toppings that everyone adds themselves (radishes, avocado, lime): that is what makes it sociable.
