Nutritional benefits

Seitan (wheat protein) is one of the richest plant sources of protein, with a texture close to meat and little fat. Combined with crunchy vegetables, it makes a very filling, tasty plant-based dish. Note: it contains gluten (so it is not suitable if you are gluten intolerant). Naturally dairy-free.

Variations and substitutions

  • With tofu or tempeh (gluten-free).
  • Served with rice or noodles.
  • Marinated before cooking for more flavour.
  • Spicier: add sriracha or garlic.

Storage and making ahead

Keeps for 3 days and can be reheated in a frying pan. Ideal for a lunchbox.

💡 Good to know

Brown the seitan well so that it becomes crisp and caramelised: that is what makes it tasty and appetising.
