Nutritional benefits
This one-pot dish brings together protein (chicken), complex carbohydrate and fibre (bulgur) and vegetables on one balanced plate. All-in-one cooking lets the bulgur absorb the flavours of the stock and vegetables. Practical, complete and ideal for batch cooking.
Variations and substitutions
- Gluten-free: replace the bulgur with quinoa or rice.
- Vegetarian: chickpeas instead of chicken.
- Spiced: cumin, turmeric, ras el hanout.
- With seasonal vegetables.
Storage and make-ahead
Keeps for 3 days and reheats with a little water. Ideal for a lunchbox.
💡 Good to know
Adjust the liquid at the end of cooking: the bulgur should be tender and the dish moist, not dry.
