Ingredients

Method

  1. Fry the garlic and chilli in the oil.
  2. Add the tomatoes and simmer for 12 minutes.
  3. Toss with the al dente penne.
  4. Finish with parsley.

Nutritional benefits

A homemade tomato sauce is light and rich in lycopene and vitamin C, without the sugars and additives of ready-made sauces. The chilli provides capsaicin, which adds heat without calories. An inexpensive, balanced dish, ideal when watching your weight if made with wholewheat pasta.

Variations and substitutions

  • With wholewheat pasta for more fibre.
  • With Parmesan (not vegan).
  • Hotter or milder to taste.
  • With vegetables: pepper, aubergine.

Storage and making ahead

The sauce keeps for 4 days and can be frozen. It tastes even better reheated.

💡 Good to know

Add the chilli gradually: arrabbiata should be hot but still enjoyable, so find the balance by tasting.
