Nutritional benefits
Baked oats turn oats into a complete, indulgent breakfast: the oats provide fibre and slow-release complex carbohydrate for steady energy and good fullness. The banana sweetens naturally and provides potassium, while the egg and milk provide protein to get you through the morning. With no refined sugar or white flour, it is a far more nourishing alternative to a pastry, and it appeals to children and athletes alike.
Variations and substitutions
- With red berries, apple and cinnamon, or peanut butter.
- More protein: add a scoop of protein powder.
- Vegan: replace the egg with soaked chia seeds.
- As individual portions in ramekins for the week.
Storage and making ahead
Baked oats keep for 3 days in the fridge and reheat in 30 seconds in the microwave: make them in ramekins on Sunday for ready-made breakfasts all week. Eat them hot or cold.
💡 Good to know
For a meltingly soft, chocolate fondant texture, take them out while the centre is still slightly wobbly. A very ripe banana reduces the need for sugar.
