Nutritional benefits
These muffins are a healthy alternative to shop-bought pastries and cakes: made with oats rather than white flour, they provide fibre and complex carbohydrate for lasting energy, without a sugar spike. The banana sweetens the batter naturally, the yoghurt adds protein and calcium, and the blueberries bring antioxidants. Low in sugar, they suit children’s snacks and a breakfast on the go equally well.
Variations and substitutions
- Lactose-free: replace the yoghurt with a plant-based yoghurt.
- Other fruit: raspberries, chocolate chips or diced apple.
- Higher in protein: add a scoop of protein powder.
- Vegan: replace the eggs with soaked chia seeds.
Storage and making ahead
These muffins keep for 3 days at room temperature in an airtight tin and freeze very well individually: take one out the night before for a ready-made breakfast. Perfect for batch cooking for the week.
💡 Good to know
Bake a batch on Sunday and freeze them: you will have homemade snacks and breakfasts all week, far healthier and cheaper than packaged cakes.
