Ingredients

Method

  1. Brown the chicken and set aside. Fry the onion and spices.
  2. Add the carrots, a little water and the chicken. Leave to simmer for 20 minutes.
  3. Add the courgettes and chickpeas and continue for 15 minutes.
  4. Adjust the seasoning and serve with couscous.

Nutritional benefits

The chicken provides filling lean protein, the chickpeas provide plant protein and fibre, and the variety of vegetables brings vitamins and antioxidants. The spices (cumin, cinnamon) add flavour without calories and can help digestion. A complete, balanced dish that is naturally gluten-free.

Variations and substitutions

  • With lean lamb, or a vegetarian version (chickpeas only).
  • With dried apricots for a sweet and savoury touch.
  • More vegetables: turnip, pumpkin, aubergine.
  • Spiced up with ras el hanout.

Storage and making ahead

Best reheated the next day. Keeps for 3 days and freezes well. Perfect for batch cooking.

💡 Good to know

Long, gentle cooking tenderises the chicken and develops the flavours: don’t rush the simmering.
