Ingredients

Method

  1. Brown the chicken pieces, then set aside.
  2. Fry the vegetables, then add the bulgur and paprika.
  3. Pour in the tomatoes and stock and return the chicken to the pot.
  4. Cover and simmer for 15 minutes, until the liquid is absorbed.

Nutritional benefits

This one-pot dish brings together protein (chicken), complex carbohydrate and fibre (bulgur) and vegetables on one balanced plate. All-in-one cooking lets the bulgur absorb the flavours of the stock and vegetables. Practical, complete and ideal for batch cooking.

Variations and substitutions

  • Gluten-free: replace the bulgur with quinoa or rice.
  • Vegetarian: chickpeas instead of chicken.
  • Spiced: cumin, turmeric, ras el hanout.
  • With seasonal vegetables.

Storage and make-ahead

Keeps for 3 days and reheats with a little water. Ideal for a lunchbox.

💡 Good to know

Adjust the liquid at the end of cooking: the bulgur should be tender and the dish moist, not dry.
