Ingredients

Method

  1. Cut the chicken into strips and brown in a frying pan, then set aside.
  2. Soften the onion with the curry powder and turmeric, then add the courgette and pepper.
  3. Pour in the coconut milk, return the chicken and simmer for 12 to 15 minutes.
  4. Adjust the seasoning and serve with rice.

Nutritional benefits

Chicken breast provides plenty of lean protein (28 g per serving) for fullness and muscle, with little fat. The vegetables (courgette, pepper) add fibre, vitamin C and antioxidants, and the curry and turmeric add an anti-inflammatory dimension. The coconut milk, a source of fat, binds the sauce and improves the absorption of fat-soluble nutrients. A complete, balanced dinner that is naturally gluten-free.

Variations and substitutions

  • Lighter: reduced-fat coconut milk or yoghurt stirred in at the end.
  • Vegetarian: replace the chicken with tofu or chickpeas.
  • More vegetables: broccoli, spinach, carrot, sweet potato.
  • Low carb: serve with cauliflower rice.

Storage and making ahead

This dish keeps for 3 days in the fridge and freezes well: ideal for meal prep with a portion of rice. Reheat gently, adding a little water or coconut milk if the sauce has thickened.

💡 Good to know

Always add a pinch of black pepper with the turmeric: the piperine greatly boosts the absorption of curcumin. Just brown the chicken before removing it; it will finish cooking in the sauce and stay tender.
