Ingredients
Method
- Hollow out the tomatoes and set the tops aside.
- Mix the meat, onion, garlic, egg and parsley.
- Fill the tomatoes and put the tops back on.
- Bake for 45 minutes at 180 °C, on a bed of rice if you want a complete meal.
Nutritional benefits
Tomatoes, rich in lycopene and water, lighten this meat-based dish. By choosing lean mince and adding herbs rather than breadcrumbs, you get a flavourful, high-protein stuffing. Naturally gluten-free.
Variations and substitutions
- Vegetarian stuffing (lentils, quinoa).
- Stuffed courgettes or peppers instead.
- With rice mixed straight into the stuffing.
- With turkey meat (leaner).
Storage and making ahead
Keep for 3 days and reheat in the oven. Even better the next day.
💡 Good to know
Salt the inside of the hollowed-out tomatoes and leave them upside down for 10 minutes to drain: they will release less water during cooking.
