- 1 chilli
- 2 tbsp olive oil
- 1 bunch of parsley
Method
- Fry the garlic and chilli in the oil.

Nutritional benefits
A homemade tomato sauce is light and rich in lycopene and vitamin C, without the sugars and additives of ready-made sauces. The chilli provides capsaicin, which adds heat without calories. An inexpensive, balanced dish, ideal when watching your weight if made with wholewheat pasta.
Variations and substitutions
- With wholewheat pasta for more fibre.
- With Parmesan (not vegan).
- Hotter or milder to taste.
- With vegetables: pepper, aubergine.
Storage and making ahead
The sauce keeps for 4 days and can be frozen. It tastes even better reheated.
💡 Good to know
Add the chilli gradually: arrabbiata should be hot but still enjoyable, so find the balance by tasting.
