Ingredients
Method
- Cut the carrots into sticks.
- Coat them with the oil, honey and cumin.
- Spread out on a baking tray.
- Roast for 30 minutes at 200°C, then scatter over the parsley.
Nutritional benefits
Carrot is rich in fibre and antioxidant beta-carotene, which is better absorbed with a little fat. Roasted, it caramelises and becomes naturally sweet, with just a touch of honey. Cumin adds flavour without calories. A tasty, healthy and colourful side dish.
Variations and substitutions
- With multicoloured carrots.
- With maple syrup (vegan version).
- With seeds (sesame, whole cumin).
- With ras el hanout.
Storage and making ahead
Keep for 3 days and reheat in the oven. Also good cold in a salad.
💡 Good to know
Cut the carrots into sticks of equal size and do not overcrowd the tray: they will caramelise instead of steaming.
